  • 1 jalapeno pepper chopped
  • 1 serrano pepper chopped (optional, for spicier)
  • 2 cloves garlic chopped
  • 1 pound ground beef (you can use other ground meats, like chicken, turkey or pork)
  • 2 large tomatoes chopped
  • 3/4 cup beef stock (or use chicken or vegetable stock)
  • 1 tablespoon paprika
  • 1 tablespoon Mexican oregano
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • FOR SERVING: Cooked rice or warmed tortillas, sliced peppers, chili flakes, fresh lime juice, hot sauce

Instructions:
  1. Heat the oil in a large pan over medium heat. Add the potatoes, onion, and peppers, and sauté them for 5 minutes to achieve a tender texture.

  3. Combine the tomatoes, stock, and seasonings into the mixture, stirring them in. Reduce the heat to a simmer and let it gently cook.
  4. Allow the mixture to simmer for 20 minutes to ensure thorough cooking and to allow the potatoes to soften.

    1. Using a food processor or high-speed blender, place the chicken and process until it is ground. If needed, work in batches and then transfer the ground chicken to a large mixing bowl.
    2. Put the blender back on its base and add the egg, onion, and garlic.
    3. Rapidly soak the bread in water, squeeze out the excess moisture, and add it to the blender along with salt and pepper. Process the mixture until it is well combined, then transfer it to the bowl with the ground chicken meat. Using your hands, thoroughly mix everything together.

How to make ground chicken juicy?

To make ground chicken juicy, here are a few tips to keep in mind:
      1. Choose the right cut: Opt for ground chicken that includes both dark and white meat, as this combination tends to have more flavor and moisture.
      2. Add moisture-rich ingredients: Incorporate ingredients like diced onions, minced garlic, grated zucchini, or even a small amount of plain yogurt into the ground chicken mixture. These additions can help retain moisture during cooking.
      3. Don't overcook: Overcooking ground chicken can result in dryness. Cook it just until it reaches an internal temperature of 165°F (74°C) to ensure it's fully cooked while maintaining its juiciness.
      4. Use gentle cooking methods: Instead of high heat, try cooking ground chicken on medium heat to prevent excessive moisture loss. Consider using methods like sautéing, simmering, or baking in a covered dish to help trap moisture.
      5. Incorporate sauces or marinades: Enhance the juiciness and flavor of ground chicken by marinating it in a sauce or using sauces while cooking. This can add moisture and enhance the overall taste.

Remember, ground chicken has a lower fat content compared to ground beef, which can affect its natural juiciness.

By following these tips and being mindful of the cooking process, you can enjoy juicy and flavorful ground chicken in your recipes.
