Ingredients:
  • 1 cup Spring Onions (Shallots) (40g)
  • 2 tablespoons Unsalted Butter (30g)
  • 1.1 lb Chicken Liver (500g)
  • 2 tablespoons Dried Oregano (5g)
  • 2 tablespoons Paprika (5g)
  • 1⁄4 teaspoon Himalayan Salt (1g)
  • 1⁄8 teaspoon Black Pepper (0.5g)
  • 1⁄2 cup Warm Water (125ml)
  • 1⁄8 teaspoon Xanthan Gum* (see notes)
  • 1 leaf Bay Leaf (1g)
  • 1⁄4 teaspoon Dried Parsley

DIRECTIONS:
  1. Wash and cut the spring onions/shallots.
  2. Heat a frying pan and melt the butter.
  3. Add the spring onions/shallots and fry them for couple of minutes until they are soft.
  4. Wash thoroughly the chicken liver, cut it to your desired bite-size and add it to the frying pan.
  5. Add all of the dry herbs and fry for about 2-3 minutes until the chicken liver change colour (no pink).
  6. Pour the water over it and add the xanthan gum. Stir very well to make sure the xanthan gum is mixed equally. Add the bay leaf (you can break it into 4 pieces.
  7. Cook for further 5 minutes or until the chicken liver is fully cooked (hard to touch).
  8. Serve with keto mashed potatoes (keto cauliflower mash)

2- Jamaican Style Chicken Liver:

INGREDIENTS:
  • 1 1/2 lb chicken liver
  • Maggi all purpose seasoning
  • 5 sprigs fresh thyme (leaves)
  • Black pepper (be generous)
  • 1 tbsp finely minced fresh ginger
  • 4 cloves garlic, crushed
  • 2 stalks scallion, diced
  • Browning for colour (a few drops)
  • 1 1/2 tbsp soy sauce
  • 3 - 4 Pimento grains whole/crushed
  • 1 small tomato chopped or diced
  • 1 small onion cut into strips
  • A few pieces sweet pepper
  • 1 scotch bonnet pepper
  • 1 stalk scallion
  • Thyme sprigs
  • 1 1/2 tbsp ketchup

3- Fried chicken livers:

Ingredients:
  • 2.5 lbs chicken livers
  • 6 garlic cloves
  • 2 tsp salt, divided
  • 1 tsp oregano
  • 2 tsp paprika
  • Freshly ground black pepper to taste
  • 2 cups all-purpose flour
  • Vegetable oil for frying

Directions:
  1. In a mortar "Pilon" add the garlic, 1 tsp salt, and oregano. Mash until it turns into a paste.
  2. Season the chicken livers with garlic paste and about 1 tsp of black pepper.
  3. Keep in the fridge and marinate for at least 1 hour.
  4. Add the flour into a mixing bowl with the paprika, 1 tsp salt, and black pepper to taste.
  5. Heat oil in a large skillet to 375 degrees F.
  6. Dredge the chicken livers in the seasoned flour (in batches).
  7. Gently place the coated livers, a few at a time, into the hot oil. Deep fry the livers until crisp and golden brown, 6 to 8 minutes.
